Minted Green Pea Sauce + Angel Hair


1 T olive oil
1 onion, chopped
2 cloves garlic, minced
2 c frozen peas
4 oz (quarter package) tofu
1 handful fresh mint
Salt and pepper
Vegetable or miso broth
Handful of raw cashews (optional)

Heat oil in pan, cook onion and garlic until translucent.
Add peas, and plenty of salt and pepper.
Heat until peas are bright green and cooked through
Set aside a couple spoonfuls of peas, then place remaining pea mixture, tofu, and fresh mint into food processor.
Whir and add broth in small amounts until smooth and sauce like.

Cook Angel hair according to package instructions.
Drain pasta, then drizzle with olive oil to keep noodles from getting sticky.
Combine with sauce, season with more salt if needed, then top with additional whole cooked peas.
