Pickled Red Onions

Difficulty: EASY PETE

2 c water
1 c vinegar
1 T sugar
3 T sea salt

1 red onion, sliced
1/2 t peppercorns
2 bay leaves

put onions in a bowl and toss with salt. allow to sit for 30 mins.
Clean a large mason jar by boiling it in a large pot of water, along with jar seal and ring.
Bring ingredients of brine to a boil.
while you wait for it to boil, place onion slices, peppercorns and bay leaves in a jar.
Pour boiling brine over jar stuff and seal jar.
The cooling process will seal the jar. Store in fridge.
