2 T olive oil
1 small onion, chopped
1/2 c celery, chopped
1/2 c carrots, chopped
1 c dry lentils
4 c water
1 Not Beef boullion cube
1 t salt
1/2 t ground cumin
1/2 t garam masala
1/4 t tandoori seasoning or chili powder
1/4 t ground coriander
1 can diced tomatoes
a couple grinds of grains of paradise or black pepper
heat oil in big pot, then sweat onion, carrots, and celery until softened.
add salt, cumin, masala, tandoori or chili, and coriander and stir over heat until fragrant.
add water, lentils, tomato, grains of paradise and bouillon.
cover and cook over medium low for about 40 minutes.
