Heavenly Mashed Potatoes
4-5 russet potatoes, peeled and cut into chunks
1 clove garlic, peeled
1/4 c vegan butter
2 T tofutti sour cream
4-5 grinds of nutmeg
dash of water if needed to smooth
salt and pepper to taste
bring salted water to a boil, cook potatoes and garlic clove until tender.
drain and place in a bowl, add butter and some salt and begin to mash.
add sour cream, nutmeg, pepper and small amounts of water until desired smoothness is reached.
adjust seasoning as needed.
