Ultimate Vegan Nachos

Tortilla Chips
southwest ranch (see below)
simple guacamole (see below)
daiya cheddar shreds
red onion, finely chopped
red pepper, chopped
green onion, sliced
black olives, sliced
pinto beans
frozen corn
fresh jalapenos, sliced
cilantro, chopped
lime juice

First prepare the ranch, this can be done the night before:

Southwest Ranch
1 c vegan mayo
1 t agave nectar
2 T lime juice
2 t apple cider vinegar
2 t chili powder
1 t garlic powder
1 t onion powder
1 t cumin
1/4 t cayenne pepper

Mix all ingredients, then continue to add lime juice until desired thickness is achieved.
Allow flavors to meld in fridge for several hours before serving, if possible.

Heat oven to 400
arrange one layer of tortilla chips, then top with beans, corn, red onion, and daiya.
add another layer and repeat tortila chips, beans, corn, red onion and daiya.
stick in oven until melty.

Simple Guacamole
1 ripe avocado
1/4 t minced garlic
lime juice

Now get to toppin’ those bad boys with all the fresh items you’ve prepped, dollops of guacamole, and a drizzle of ranch.
